After my run, I made another marvelous red curry chicken with roasted peanuts and cilantro with a side of jasmine rice.&lt;br /&gt;I ate ice cream from Ben &amp;amp; Jerry's. It was scrumptious!&lt;br /&gt;I listened to sections of M83's new album &lt;em&gt;Saturdays = Youth&lt;/em&gt;.&lt;br /&gt;I even studied today's lectures and reviewed the L&lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;imbic&lt;/span&gt; system.&lt;br /&gt;What did I miss? I shaved; I flossed; I brushed my teeth.&lt;br /&gt;I did not fight injustice. I did not engage in intelligent conversation about shade-grown coffee. There were no homeless people who asked me for food or money.&lt;br /&gt;In Agatha Christie's &lt;em&gt;Ten Little Indians&lt;/em&gt;, nine people are brought to justice for crimes they committed-crimes for which they were never punished.&lt;br /&gt;Sometimes the things which  I do not do bother me-sometimes more than the things I should really feel sorry about (like the book I stole from the public library or the album I illegally downloaded the other day). One day, I might find myself in the company of spinsters and petty thieves in a modern house off the coast of Devon. Most likely I'll be swallowed by a red herring or stung by a bumblebee  for the albums I've downloaded,  for David Sedaris' &lt;em&gt;Dress Your Kids in Corduroy&lt;/em&gt;, or the ten dollars I &lt;em&gt;might &lt;/em&gt;have stolen from a roommate a couple of years back. I think at the resurrection, at the day of last judgement (in my humble and professional opinion, I believe this whole Revelation thing is blown out of proportion and is used more to rally troops for war than make us question the authority of the current empire), or what have you, the triune God would be more concerned with the people I failed to encourage, failed to show hospitality to, etc... Perhaps the Three-in-one will be frustrated that I didn't date more (well, I guess the personification of God will be discussed in another thrilling post). Stay tuned.&lt;br /&gt;&lt;u&gt;&lt;/u&gt;&lt;br /&gt;&lt;u&gt;Spicy Red Chicken Curry&lt;/u&gt;&lt;br /&gt;&lt;em&gt;&lt;u&gt;Materials&lt;/u&gt;&lt;/em&gt;:&lt;br /&gt;2/3 cup unsweetened coconut milk&lt;br /&gt;2-3 tsp Thai Red Curry Paste&lt;br /&gt;1 tbsp Asian fish sauce&lt;br /&gt;3 tbsp olive oil&lt;br /&gt;1.5 lbs skinless, boneless breasts cut into 1.5" chunks&lt;br /&gt;Salt and freshly ground pepper&lt;br /&gt;1/2 lb &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;shiitake&lt;/span&gt; mushrooms (less would do, they are quite expensive)&lt;br /&gt;1 tbsp finely chopped ginger&lt;br /&gt;2 garlic cloves finely chopped&lt;br /&gt;1/2 cup water&lt;br /&gt;1 cup frozen baby peas&lt;br /&gt;Toasted Peanuts and Cilantro (garnish)&lt;br /&gt;Steamed rice&lt;br /&gt;&lt;em&gt;&lt;u&gt;Instructions&lt;/u&gt;&lt;/em&gt;:&lt;br /&gt;1. Whisk coconut milk, curry paste, and fish sauce&lt;br /&gt;2. Heat wok with 2 tbsp olive oil until smoking. Cook chicken until almost done. Set chicken aside in bowl and return wok to heat.&lt;br /&gt;3. Add remaining olive oil and stir-fry &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_4"&gt;shiitake&lt;/span&gt; mushrooms for 5 min.&lt;br /&gt;4. Add ginger and garlic. Stir-fry for 1 min.&lt;br /&gt;5. Return chicken and juices to wok.&lt;br /&gt;6. Add water, curry mixture, and peas. Bring to a boil and simmer until reduced (2-3 min.).&lt;br /&gt;7.
